Almas Caviar is golden caviar produced from the eggs of a very rare female albino sturgeon between 60 and 100 years old, which swims in the southern Caspian Sea near Iran where apparently less pollution exists.

Ultrasound is used to observe eggs. Before the eggs are massaged out, a signal protein is provided to the fish. Then the abdomen is massaged to release the eggs. This allows sturgeon fish farmers to reuse the same fish, which is typically between 60 and 120 years old. The hatched eggs are then immersed in an aqueous calcium solution to make them salty and ready for consumption.
